These Everything Bagel Guacamole-Stuffed Mini Peppers are a fun, easy appetizer or snack!

Crunchy, juicy mini peppers are filled with a quick and simple guacamole. Then just sprinkle everything bagel spice mix on top and you’re all set.

No cooking, no baking – just assemble and serve.

Plus this healthy mini pepper appetizer is low carb, gluten-free, dairy-free, vegan, keto, Paleo and Whole30 friendly!

Why this recipe works

When you need to make a bite-sized appetizer for a crowd, these Everything Bagel Guacamole-Stuffed Mini Peppers come in really handy.

If you’re already baking other things in the oven, you won’t have to worry about finding room for these – there’s no baking required!

No cooking on the stovetop either.

These low carb mini peppers just need a bit of chopping, mashing and sprinkling and before you know it, they’re ready to go.

And you end up with crunchy peppers filled with a creamy guacamole and topped with crunchy, salty everything bagel spice mix (usually a mix of poppy seeds, white and black sesame seeds, dried onion flakes, dried garlic flakes and sea salt; sometimes it’s also called everything but the bagel spice mix).

And while I listed all the different diets these mini peppers are perfect for (gluten-free, keto, etc.), that’s just an added bonus. They’re so good, people love them no matter what else they eat!

What you need for Everything Bagel Guacamole-Stuffed Mini Peppers

Ingredients:

  • one pound mini peppers, any color
  • 2 large, ripe avocados
  • 1 teaspoon lemon or lime juice
  • 1/4 teaspoon fine sea salt
  • 1.5 tablespoons everything but the bagel spice mix

Equipment:

  • a cutting board
  • a chef’s knife
  • a medium mixing bowl
  • a large spoon
  • a fork or potato masher
  • measuring spoons
  • a small sandwich baggie (optional, see instructions below)
  • a serving platter

How to make Everything Bagel Guacamole-Stuffed Mini Peppers

Step 1: Slice off and discard the tops of the mini peppers. Then cut the peppers in half lengthwise. Use a spoon to scrape out the seeds and any extra white ribs inside the peppers.

Step 2: Cut the avocados in half lengthwise and remove the pits. Scoop the flesh into a medium mixing bowl. Add the lemon or lime juice and the salt, then mash with a fork or potato masher until fairly creamy.

Step 3: You can then scoop the mashed avocado into the peppers with a spoon or you can add the mashed avocado to a sandwich baggie. Snip off one corner of the baggie and squeeze out the avocado into the peppers (this will make assembling them less messy).

Since mini peppers vary in size, there’s no set amount of filling. But don’t worry! It’s not an exact science.

Step 4: Then sprinkle over the everything bagel spice mix and serve!

Can I make substitutions?

Instead of everything bagel spice mix, top the stuffed peppers with cooked, diced bacon.

Instead of mini peppers, slice a large cucumber into coins. Top the coins with guacamole and everything bagel spice mix.

Replace the guacamole with cream cheese (dairy-free if necessary).

Can I make these stuffed mini peppers ahead of time?

The peppers can be cut in half and kept in the fridge for up to 3 days.

Once the peppers are fully assembled (with the guacamole and everything bagel topping), they are best enjoyed immediately.

Can I freeze these stuffed mini peppers?

I do not recommend freezing them.

Are these stuffed mini peppers keto?

Yep. With only 3.1 grams net carbs per serving, plus lots of healthy fat from the avocado, this is great for anyone following the keto diet.
