This homemade Paleo Hot Chocolate is a cozy, warm treat on a cold day. You only need a few ingredients (like almond milk, cocoa powder and honey) and less than 10 minutes to make it. Plus it's dairy-free and refined sugar-free and can be vegan or keto.

- 4 cups unsweetened plain almond milk
- ¼ cup unsweetened cocoa powder OR scant 1 cup chopped unsweetened chocolate
- ¼ cup honey (if using cocoa powder; 6 tablespoons if using chocolate)
- 1 teaspoon vanilla extract
Pour the almond milk into a 2-3 quart saucepan.
Add the cocoa powder or chopped chocolate, plus the honey. Place over medium heat.
As the milk heats up, occasionally whisk (if using cocoa) or stir with a spatula (if using chocolate) to blend the ingredients.
Once the mixture begins to bubble around the edges, take it off the heat and whisk or stir in the vanilla. Pour into mugs and enjoy!

You can use vanilla almond milk and omit the vanilla extract.
