Mango Popsicles

These easy Mango Popsicles are a cool, creamy treat! You only need 4 ingredients and 10 minutes of prep time. Plus they're easy to make dairy-free, vegan and/or Paleo!

Ingredients

  • cups cubed mango, fresh or frozen (thawed, if frozen)
  • 3 tablespoons plain yogurt dairy-free/vegan/Paleo, if necessary
  • 1 tablespoon honey or pure maple syrup for vegan
  • teaspoons lime juice
  • ¼ teaspoon fine sea salt
  • water, if necessary

Instructions

  • Add the mango, yogurt, honey, lime juice and salt to a blender and blend until creamy and smooth, about 1-2 minutes. If the mixture is too thick, blend in water, about 1 tablespoon at a time, for your desired consistency.
  • Pour into popsicles molds and freeze for at least 4 hours. If difficult to release from the molds, run the molds under hot water for 5-10 seconds.

Notes

Substitutions
You can use plain Greek-style yogurt instead of regular yogurt. Again, use dairy-free, vegan and/or Paleo Greek-style yogurt if necessary.
You can use pure maple syrup in place of the honey.
You can use lemon juice in place of the lime juice.
You can add a pinch of cayenne powder if you want spicy mango popsicles.
How long do these last in the freezer?
If stored in an airtight container, these popsicles are good for least 6 months in the freezer.
