Healthy Frozen Strawberry Mocktail (Whole30, sugar free)

This Healthy Frozen Strawberry Mocktail is thick, frosty and perfect for summer! It takes just a few ingredients and a few minutes to make. And since the berries are already sweet, there's no need to add any sugar!

Ingredients

  • 2 cups fresh or frozen (not thawed) strawberries, plus more for garnish, if desired
  • 6-8 tablespoons orange juice (from 1-2 oranges)
  • 4 teaspoons lime juice
  • 1 cup cold water or 2 cups ice (about two handfuls)

Instructions

  • If using fresh strawberries, remove the green tops.
  • Add the strawberries to a blender, then add the orange juice and lime juice.
    (If you're using fresh juice but don't have a citrus juicer, this is what I do: Cut the orange or lime in half. Set a small mesh sieve over a measuring glass, stab the cut side of the orange or lime with a fork, aim the cut side down over the sieve and squeeze and rotate the fruit while twisting the fork until you gouge out every last drop of juice.)
  • Add the ice (if using fresh berries) or water (if using frozen) and blend! If your blender has an ice crush function, start with that whether you're using fresh or frozen berries. Then switch to a regular blend mode.
    If it seems to thick, add water about 1 tablespoon at a time. If it's too thin, add more berries.
  • Pour into a glass and garnish with a strawberry, if desired.

Notes

For four drinks, you'll need 4 cups strawberries, 1 cup orange juice, 8 teaspoons (or about 2.5 tablespoons) lime juice and 2 cups water or 4 cups ice. Depending on the size and power of your blender, you might have to make this in two batches.
Make ahead and storage
The mocktail can be kept in the fridge for up to 5 days but it won't be frozen anymore. It'll just be a delicious strawberry mocktail.
You can also freeze the mixture in a freezer-safe, airtight container or baggie for up to 3 months. You will need to thaw it before it's pourable again - this should take anywhere from 1-3 hours at room temperature or 4-6 hours in the fridge. If there are still large frozen chunks, you can re-blend it.
Substitutions and variations
  • You can use other fruit besides strawberries: cherries, raspberries, blueberries, chopped peaches, etc. I haven't personally tried all these versions but they should work.
  • You can leave out the orange juice or lime juice, or use lemon juice instead for a strawberry lemonade flavor. Start with 2 tablespoons when making 2 drinks and add more if you like.
  • This would be great with fresh basil or mint either blended into the drink or the leaves added to the glass as a garnish.
  • Like I said above, feel free to add 100% agave silver tequila, white rum, vodka or gin.
