Ingredients

  • ¾ cup unsweetened plain almond milk
  • 2 cups (1 pint) coconut milk vanilla ice cream
  • 1 cup loosely packed fresh mint leaves

Instructions

  • Add the almond milk and ice cream to a blender.
  • Roughly tear or chop any large mint leaves to help blend them better. Add all the mint to the blender and blitz everything until blended. You'll still see some bits of mint; just blend long enough to to make them as small as possible.

Notes

  • Use whatever vanilla ice cream you prefer, just know that different types might change the flavor
